Five vegan soups to get you through that busy work week

Five vegan soups to get you through that busy work week

Let’s face it; the truth is that many of us don’t have time to cook every day.

Those of us with busy work and social lives far too often find ourselves noshing on handfuls of dry cereal, eating hummus with a spoon, or hunched over a keyboard with half a baguette hanging out of the side of our mouths like a fat cigar. (Everybody does this,

Well, there’s an answer to this problem, and it’s soup. A nutritious, delicious, (almost) impossible-to-mess-up meal that’s easy to make in big batches, store, and travel with. Heck, sometimes you can even skip the spoon.

We’ve done some digging and taste testing for you, so here’s five awesome vegan soups — that aren’t just hot vegetable water — to get you to the weekend, so you can go back to beer and pizza.

That’ll stay between us though.

Lasagna Soup — Liv B

It’s pasta, and it’s soup. How can you go wrong?

The addition of a hearty helping of lasagna noodles makes this soup — a hit among Liv B’s followers — super filling, and allows for that stick-to-your-ribs feeling that won’t leave you wanting after your lunch break.

Oh, and did we mention that this recipe is unbelievably easy? Enough said.

Vegan Peppery Purple Soup — Gaz Oakley

This soup is as beautiful as is delicious, and we could not resist putting it on this list. This is the deepest purple soup made from red cabbage and red onion.

The brainchild of plant-based cookery sensation Gaz Oakley, this smooth and creamy soup is perfect for those of us who don’t have time to waste on a spoon, and prefer to drink our soup, whether that be it in the car or when running between meetings.

Just check the temperature before driving while souping, alright? We’re not trying to cause an accident here, folks.

Easy Vegan Potato and Corn Chowder — It Doesn’t Taste Like Chicken

There are few plant-based foods that are quite as filling as corn and potatoes, and this chowder has both.

Pair that starchy vegetable goodness with a creamy base, and you’re stuffed.

Forget salad, this is a meal that’ll stay with you through raise negotiations and that painfully long commute. We don’t need you biting anyone’s head off on the way home from work.

Easy Vegan Chili — From My Bowl

Is chili soup? Probably not — but whatever.

Loaded with legumes, this chili, from pro blogger Caitlin Shoemaker, is a hearty, easy, go-to meal you can make in a massive batch and eat all week.

While it’s a great option any time of the year, this dish is especially good for those cold winter days or, if you happen to live in a particularly dodgy climate, well into spring.

Easy Vegan Broccoli Cheddar Soup — Sweet Simple Vegan

This soup has been a bit of a sensation among fans of the Sweet Simple Vegan blog, a labor of love from foodies and entrepreneurs, Jasmine Briones and Chris Petrellese.

Made with just 10 ingredients, this recipe takes no time at all and is loaded with good stuff. Cashews, nutritional yeast and garlic being among its best ingredients, obviously.

The healthy fat content in this dish makes it super satisfying, and you can always throw in a can of white beans for an added protein punch.
