JUST buys a production facility to make vegan eggs cheaper than chicken eggs
California-based food technology startup called JUST has just recently obtained a 30,000 square-foot production facility and 40 acres of land in Appleton Minnesota which will help the company to scale its production of plant-based foods including its well known and popular egg replacer JUST Egg.
JUST Egg launched in stores in 2018 and has sold the equivalent of more than 10 million chicken eggs. At present, the cost to produce one vegan egg is 20 cents and the company aims to have this cost reduced to about 4.7 cents per vegan egg over the next 2 years.
The company started as a dairy brokering business, before moving to whey protein production, and in 2015 it started working with plant proteins. Lori and Mike Lind, who co-owned the plant with Lori’s brother John Droogsma, say the development means the company can keep its employees on the payroll and continue to support local businesses that help theirs run.
While JUST has other products, including mayo, salad dressings and cookie dough, the company wants to put their energy right now on products like JUST Egg and JUST Meat, which can be scaled and make a larger difference in nutrition and sustainability on a global scale.
