Tofu Part 3: Marinating

What You’ll Need

  1. a shallow bowl or dish
  2. a marinade recipe (3 recipes below)
  3. 1 block of firm or extra-firm tofu, drained, and cut up


  1. Assemble your marinade.
  2. Place your drained and cut up tofu into your shallow dish.
  3. Cover with marinade, mixing slightly to coat the tofu without breaking it.
  4. Leave to marinate, covered, in the fridge for 1 to 12 hours. Strong marinades and smaller pieces of tofu with more surface area will require less marinating time. Milder marinades and larger pieces of tofu will require more time to marinate.
  5. After your tofu has marinated for sufficient time, it’s time to cook! If you’re going to sauté, fry, or grill your tofu, lightly blot off any extra marinade. If you’re baking your tofu, you may leave marinade on to add flavor, if desired.

Marinade Recipes

Asian Marinated Tofu

  1. 2 tbsp soy sauce
  2. 1 tbsp rice wine vinegar
  3. 1/2 tsp sesame oil
  4. 1 tsp mirin
  5. 2 cloves garlic, minced
  6. 1 tsp chili sauce

Smoky Maple Tofu

  1. 4 cloves garlic, minced
  2. 1 tsp soy sauce
  3. 1 tbsp of maple syrup
  4. 1/4 tsp of liquid smoke
  5. 2 tbsp of water


Salsa Tofu

  1. 3 tbsp salsa
  2. 1 tbsp sriracha
  3. 1/4 tsp chili powder
  4. 2-3 garlic cloves, minced
  5. 1/4 tsp cumin
  6. 1 tsp lemon juice
  7. 1 tsp salt
